When Carol Hall moved to Mendocino in the 1980s she brought with her more than just a big dose of Southern charm and hospitality. She also brought her family recipe for Hot Pepper Jelly. It is still a family operation, with various and sundry Halls working in the business, but it is about a lot more than the original two jellies, though they still remain a cornerstone of the thriving business. Still one problem remains with the pepper jellies: it is almost impossible not to finish the jar as soon as you open it.

Today there are hot sauces, dessert toppings like Raspberries with Chardonnay and Pear William, and Olallieberries with Cabernet Sauvignon. And staying with wine and spirits there are a variety of Wine Conserves. In a non-spirituous vein there are also fruit syrups and herb vinegars. The pepper jellies now include a Ginger Pepper Jelly, a Jalapeno Pepper, and the always-popular Red Pepper Jelly. The Natural Mint Jelly is perfect simplicity and makes a grand foil for meats.
